Fried Middlecut
Ingredients: 
  • 1 x 425g can Saldanha Middlecut OR Pilchards, drained
  • 1 cup cake flour
  • Oil for frying
  • 1 lemon
  • Salt and black pepper to taste
Method: 
  1. Drain and halve the middlecut or pilchards lengthwise.
  2. Toss middlecut or pilchards in flour. Shake off excess flour.
  3. Fry in heated oil until golden brown.
  4. Serve with lemon wedges and seasoning to taste.

Takes about 15 minutes.
