- 1 x 425g can Saldanha Middlecut OR Pilchards, drained
- 1 cup cake flour
- Oil for frying
- 1 lemon
- Salt and black pepper to taste
- Drain and halve the middlecut or pilchards lengthwise.
- Toss middlecut or pilchards in flour. Shake off excess flour.
- Fry in heated oil until golden brown.
- Serve with lemon wedges and seasoning to taste.
Takes about 15 minutes.
