Lentil Curry with Saldanha Middlecut
Ingredients: 
  • 1 x 400g can Saldanha Middlecut, drained
  • 1 cup lentils, cooked
  • 1 large onion, chopped
  • 1 tomato, chopped
  • 1 tbsp crushed garlic & ginger paste
  • 1 tbsp sugar
  • 2 tbsp mayonnaise
  • ½ cup plain yoghurt
  • 2 tbsp Rajah curry powder, heaped
  • 1 tbsp breyani masala
  • 2 tbsp oil for frying
Method: 
  1. Fry onions and crushed garlic & ginger paste in oil for 2 minutes.
  2. Add tomato, sugar, curry and breyani masala.
  3. Simmer for 10 minutes, adding a little water as necessary.
  4. Stir in mayonnaise and yoghurt, and reduce heat.
  5. Add cooked lentils and middlecut, mixing together gently.
  6. Cover, turn off heat and leave for a few minutes.
  7. Serve with rice or maize and salad.

Takes about 40 minutes.
