Saldanha Tuna Oven Omelette
Ingredients: 
  • 2 x 170g cans Saldanha Flaked Light Meat Tuna in Brine OR Vegetable Oil, drained
  • 6 eggs, beaten
  • 1 x 410g can whole kernel corn
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 3 tbsp chopped coriander
  • 1tsp mixed herbs
  • 1 cup cheese, grated
  • 1 fresh chilli, chopped
  • ½ cup milk
  • Salt and black pepper to taste
  • 3 tbsp oil for frying
Method: 
  1. Heat oil.
  2. Fry onion, peppers, chilli and mixed herbs until slightly browned.
  3. Set aside.
  4. In a separate bowl mix the eggs, milk, corn and tuna.
  5. Add the onion mixture.
  6. Season to taste.
  7. Pour into an oven dish.
  8. Sprinkle with cheese and bake in oven at 180C for 20 - 25 minutes.

Takes about 20 minutes.
