Saldanha Tuna Paella

Saldanha Tuna Paella
  • 2 x 170g cans Saldanha Flaked Light Meat Tuna in Vegetable Oil, drained
  • 1 x 215g can Saldanha Sardines, drained
  • 1 tbsp crushed garlic & ginger paste
  • 1 tomato, chopped
  • 2 fresh chillies, finely chopped
  • 1 cup frozen mixed vegetables
  • 2 cups rice, cooked
  • ½ chicken stock cube, crumbled
  • 1 tbsp Rajah curry powder
  • A handful of coriander leaves
  • Salt and black pepper to taste
  • 4 tbsp olive oil for frying
  1. Heat the oil.
  2. Fry chillies, curry and crushed garlic & ginger paste on a low heat.
  3. Add the tomato, chicken stock and mixed vegetables.
  4. Stir gently until the flavours blend.
  5. Add rice, curry and coriander and stir on low heat for 1 to 2 minutes.
  6. Add the tuna and gently toss it in with the rice and vegetable mix.
  7. Lastly, split the sardines in half and place them gently into the rice mixture.
  8. Cover with lid, switch off heat and allow flavours to absorb for a few minutes.
  9. Season to taste.

Takes about 30 minutes.
