Tomato & Basil Pasta Salad
  • 2 x 185g cans Saldanha Flaked Light Meat Tuna with a Tomato and Basil Dressing
  • 1 tbsp olive oil
  • 200g cherry tomatoes
  • 3 medium baby marrows, cut into ribbons with a vegetable peeler
  • 250g penne pasta, cooked and drained
  • 4 tbsp pitted olives
  • 2 tbsp tomato pesto
  • 3 tbsp fresh basil, chopped
  • Salt and black pepper to taste
  • Parmesan shavings
  1. Cook pasta according to package directions and drain.
  2. Heat the olive oil in a frying pan and fry the tomatoes until their skins are slightly wrinkled.
  3. Add the baby marrows and fry for 1 minute.
  4. Add cooked pasta, tuna, olives, pesto and basil.
  5. Season to taste.
  6. Serve hot or at room temperature.
  7. Top with parmesan shavings.

Takes about 30 minutes.
