Tomato & Red Onion Bruschetta
  • 1 x 185g can Saldanha Flaked Light Meat Tuna with a Tomato and Basil Dressing
  • 2 tomatoes, chopped into small cubes
  • 1 small red onion, thinly sliced
  • A handful of small fresh basil leaves – keep a few aside for garnishing
  • 125g mozzarella, thinly sliced
  • 1 small ciabatta, sliced diagonally
  • Salt and black pepper to taste
  1. Brush the slices of ciabatta with olive oil and garlic (optional).
  2. Toast the slices until golden brown.
  3. Mix the tuna, tomatoes, onion and three quarters of the basil leaves together.
  4. Place the mozzarella on the toasted slices of ciabatta and top with the tuna mixture.
  5. Season to taste.
  6. Garnish with the remaining basil leaves.

Takes about 20 minutes.
