Tuna & Vegetable Stir-Fry
Ingredients: 
  • 1 x 170g can Saldanha Flaked Light Meat Tuna in Vegetable Oil, drained
  • 1 tsp sesame oil
  • 2 tsp sunflower oil
  • 1 carrot, sliced thinly on the diagonal
  • 2 celery sticks, sliced thinly on the diagonal
  • ½ red pepper, sliced
  • 250ml broccoli florets
  • 125ml sugar snap peas
  • 250ml red cabbage, finely sliced
  • 1 packet 2 minute noodles, prepared according to the instructions on the packet
  • 1 tbsp soy sauce
  • 2 tsp sesame seeds - optional
  • 1 spring onion, finely sliced
Method: 
  1. Heat the sesame and sunflower oil in a wok.
  2. Add the vegetables and stir fry for 3 minutes.
  3. Add the tuna, noodles, soy sauce and sesame seeds (if using).
  4. Heat through and serve with a sprinkling of spring onion (and sesame seeds if using).

Takes about 20 minutes.
