Pilchards Leek Pie

Ingredients

  • 1 x 400g can Saldanha Pilchards in Tomato Sauce
  • ½ cup butter
  • 1 cup cake flour
  • ¼ cup sesame seeds – optional
  • ¼ tsp salt
  • 2 leeks, finely chopped
  • 1 tsp mustard powder
  • 1 tsp mixed herbs
  • 1 tbsp lemon juice
  • 2 tbsp mayonnaise
  • 2 extra large eggs
  • ½ cup cheddar cheese, grated
  • ½ cup cream OR milk

Note: Leeks, if unavailable, can be replaced with onions.

Method

  1. Melt butter, then mix with the flour, sesame seeds and salt.
  2. Press into a greased pie dish.
  3. Bake (without filling) at 200˚C for 10 minutes.
  4. Remove from oven and set aside.
  5. Mash pilchards with leeks or onions, mustard powder, mixed herbs, lemon juice, mayonnaise and one egg.
  6. Spoon into pie crust and top with grated cheese.
  7. Mix cream or milk with remaining egg and pour over the filling.
  8. Bake at 180˚C for 25 minutes or until set.
  9. Serve with a side salad.
