Middlecut on Toast

Ingredients
- 1 x 400g can Saldanha Middlecut OR Pilchards in Tomato Sauce, drained
- ¼ cup plain yoghurt
- 1 tbsp basil pesto
- 1 tsp lemon/lime juice, to taste
- Basil leaves
- 2 tbsp mayonnaise
- Salt and black pepper to taste
Method
- Drain and mash the middlecut or pilchards.
- Mix yoghurt, pesto, lemon/lime juice and mayonnaise together and stir into the mashed middlecut or pilchards.
- Serve on toast or fresh bread.
- Garnish with basil leaves, garnish to taste with salt and black pepper and serve with lemon or lime wedges.
