Pilchards, Apple & Celery Salad

Ingredients

  • 1 x 215g can Saldanha Pilchards in Tomato Sauce
  • 1 red apple, unpeeled
  • 1 green apple, unpeeled
  • Lemon juice
  • 1 cup celery, sliced
  • 1 cup walnuts, chopped – optional
  • Black pepper to taste
  • 3 tbsp mayonnaise
  • ½ cup smooth cottage cheese
  • 3 – 4 tbsp milk
  • 1 iceberg lettuce
  • Parsley to garnish

 

Method

  1. Dice the apples and sprinkle them with a little lemon juice to prevent discolouration.
  2. Add the celery and walnuts.
  3. Add freshly ground black pepper to taste.
  4. Add 2 tbsp mayonnaise to moisten the mixture.
  5. Mix the cottage cheese with 1 tbsp mayonnaise.
  6. Add milk and mix to a pouring consistency.
  7. Arrange the lettuce on a large plate.
  8. Top with the apple, celery and nut mixture followed by all the drained pilchards.
  9. Drizzle the cottage cheese mixture over the pilchards or serve as a side sauce.
  10. Garnish with parsley.
