Middlecut Breyani

Ingredients
- 1 x 425g can Saldanha Middlecut OR Pilchards
- 4 tbsp breyani masala
- 2 tsp crushed garlic & ginger paste
- 3 large onions, chopped
- ¾ cup buttermilk
- 1 tsp salt
- 3 cinnamon sticks
- 3 medium tomatoes, grated
- Dash of lemon juice
- 2 tsp tomato paste
- ½ cup lentils
- Handful coriander
- 5 potatoes, cubed
- 2 cups basmati rice
Method
- Fry onions until golden brown. Drain onion on roller towel.
- Melt 50g butter or margarine in a pot. Add 25ml oil.
- Add onion, breyani masala, buttermilk, crushed garlic & ginger paste, salt, cinnamon, grated tomatoes, tomato paste, dash of lemon juice and 2 cups of water.
- Drain and flake middlecut or pilchards and add to above.
- Simmer until thick.
- Add coriander and remove from stove.
- Fry potatoes in deep oil as for chips.
- Cook rice until half done.
- Cook lentils until done.
- Stir everything together gently.
- Place breyani in a dish and microwave for about 8 minutes.
