Lentil Curry with Saldanha Middlecut

Ingredients
- 1 x 400g can Saldanha Middlecut, drained
- 1 cup lentils, cooked
- 1 large onion, chopped
- 1 tomato, chopped
- 1 tbsp crushed garlic & ginger paste
- 1 tbsp sugar
- 2 tbsp mayonnaise
- ½ cup plain yoghurt
- 2 tbsp Rajah curry powder, heaped
- 1 tbsp breyani masala
- 2 tbsp oil for frying
Method
- Fry onions and crushed garlic & ginger paste in oil for 2 minutes.
- Add tomato, sugar, curry and breyani masala.
- Simmer for 10 minutes, adding a little water as necessary.
- Stir in mayonnaise and yoghurt, and reduce heat.
- Add cooked lentils and middlecut, mixing together gently.
- Cover, turn off heat and leave for a few minutes.
- Serve with rice or maize and salad.
