Pilchards Savoury Rice (Pilchards Paella)

Ingredients
- 1 x 215g can Saldanha Pilchards in Tomato Sauce OR Hot Chilli Sauce
- 2 tbsp oil
- 2 cloves garlic – optional
- 1 onion, sliced
- 1 tsp masala
- 1 cup rice
- 300g frozen mixed vegetables
- Salt and black pepper to taste
- Chopped parsley – optional
Method
- Drain the pilchards and place sauce to one side.
- Flake the pilchard fillets and set to one side.
- Cook rice.
- Heat the oil and fry onion, masala and garlic.
- Fry until lightly browned.
- Add the frozen vegetables and cook until soft.
- Add rice, flaked pilchards and sauce. Mix together well.
- Simmer until the mixture is heated through and the liquid is absorbed.
- Add salt and pepper to taste.
- Sprinkle with parsley just before serving.
